Situated in Pertuis, at the crossroads of Provence and the Luberon, the restaurant enjoys a strategic location at the heart of a rich ecosystem of local producers. Just a few kilometres from Aix-en-Provence, it radiates across a region where gastronomy and local produce are intertwined.
Fifty years on, a new page is being written. At just 25 years of age, chef Christophe Pulizzi has taken over the reins of the L’Olivier restaurant, with the ambition of infusing it with a strong, resolutely modern identity.
In his quest for excellence, he creates a cuisine that is both sensitive and assertive, where each dish tells a story, the story of his attachment to the product, to seasonal produce and to traditional skills.
The aim of this approach is to make L’Olivier one of the finest restaurants in Pertuis and to establish it as a permanent fixture on the gastronomic scene.
An author’s cuisine
A son of Sicily, a volcanic land bathed in sunshine and tradition, Christophe grew up between rows of lemon and orange trees, where the scent of citrus mingles with that of the sea. It was in this vibrant setting that his passion for the land, for real produce and for simple but precise gestures was born – inherited from a family for whom cooking was an art and a labour of love.


Against the current
À Contre Courant is first and foremost an experience. A blind menu, designed without reference points or certainties, where each dish becomes a discovery and each mouthful a promise.
It evolves with the seasons and the inspiration of the Chef, who explores contrasts, blending audacity and refinement. He revisits codes, plays with textures and signs his dishes with citrus notes, true markers of his culinary identity, bringing freshness, sparkle and surprise.
Symbolically guided by the course of the Durance, from the calanques to the Alpine peaks, this cuisine celebrates the landscapes and producers that inspire it.
A culinary experience that’s both instinctive and thoughtful, where tradition and modernity meet, with a dash of daring.
